We've paired this healthy kitchensinkit recipe with halibut & red snapper, and a little bit of sautéed corn, but this cauliflower & potato purée would go well with any protein! This purée can also be made with butternut squash & sweet potato which is also super delicious! PURPLE CAULIFLOWER & POTATO PUREE INGREDIENTS

PURPLE CAULIFLOWER & POTATO PUREE INSTRUCTIONS

  • Peel & chop potato

  • Chop cauliflower

  • Boil potato & cauliflower in a pot of water for 20 minutes (until soft)

  • Before straining your pot, use a measuring cup to carefully scoop out 1/4 cup of the purple water. This helps your purée keep the purple color & the starch from the potato in this water acts as a thickener for the purée.

  • Once you strain your pot, add the potato & cauliflower to your Vitamix blender with 1T butter & desired amount of seasoning

  • Blend it up, leave the hole open at the top of your blender so steam can escape but cover the hole with a paper towel so it doesn't splatter everywhere!

  • Serving size: 2 meals

Pair this with your desired protein, any additional toppings, and plan a date night at-home with your significant other, enjoying a healthy meal that you can feel good about eating! Head to the kitchensinkit cocktails page if you need a fancy alcoholic beverage to pair with your fancy dinner, too!

As mentioned earlier, we like to pair this purée with seafood. To make halibut and/or red snapper, place it in your air-fryer and cook for 15 minutes at 400 degrees. We spray our air-fryer with avocado oil spray and lightly season the fish. You can always add more seasoning afterwards if needed!

To sauté corn, simply remove it from the cobb with a knife and place it in a pan with a little butter on medium high heat until the corn is done to your desired amount of brownness.

If you follow Beachbody's portion control containers, this recipe is 1 green (cauliflower), and 1 yellow (potato). If you want to learn more about this diet, read this post! If you are looking for more healthy recipes & meal planning tips, check out the kitchensinkit recipes page!
