Who else loves buffalo chicken?! I decided to make a classic recipe into a healthy crockpot, making it super easy for meal prep! ~3lbs of chicken (makes enough for 6 meals total)
1 bottle of buffalo sauce (we don't usually pour the entire bottle in, because I like to add a little extra when it is time to eat this meal)
1 packet of dry ranch seasoning
1-2 cups of chicken broth
A little extra seasoning (if desired)
Spray your crockpot with cooking spray
Add all of the above ingredients to your crockpot
Cook on low for 5-8 hours
OTHER INGREDIENTS TO MAKE THIS A COMPLETE MEAL
Your choice of veggie - we recommend broccoli/cauliflower rice or make it into a salad with lettuce, tomato, cucumber, celery, etc.
Blue cheese or avocado for a healthy fat
When your crockpot is done, divide it up into your favorite meal prep containers, and this gives you & your significant other enough food for 3 meals! As an example, Richie & I will eat this for lunch on Monday, Wednesday, & Friday during the week. We love eating this chicken with blue cheese because buffalo sauce & blue cheese are an ideal pairing! For veggies, we like to buy microwave bags of broccoli/cauliflower rice or use the buffalo chicken in a simple salad or assemble it into a buffalo chicken wrap.
