Easy Chicken Salsa Verde Crockpot Recipe

The kitchensinkit chicken salsa verde crockpot is easy, healthy, versatile, & well-balanced, making it the perfect recipe to meal prep for your weekly meal plan. All you need is chicken, salsa verde, chicken broth, & taco seasoning in the crockpot. To make it a complete meal, enjoy with avocado & cauliflower rice!

CROCKPOT INGREDIENTS

  • ~3lbs of chicken

  • 1 jar of salsa verde (we buy 2 the store so we can have some extra to add on the days that we're eating this)

  • 1 cup of chicken broth

  • Desired amount of green pepper sauce

  • 2 tablespoons of my salt-free taco seasoning (warning: this makes the crockpot less verde, but I highly recommend adding extra seasoning for more flavor, because who likes eating boring food, right?!)


CROCKPOT INSTRUCTIONS

  • Spray your crockpot with cooking spray

  • Add all of the above ingredients to your crockpot

  • Cook on low for 5-8 hours

When your crockpot is done, divide it into your favorite meal prep containers, and this gives you & your significant other enough food for 3 meals each! As an example, Richie & I will eat this for lunch on Monday, Wednesday, & Friday during the week. For veggies, we like to buy microwave bags of broccoli/cauliflower rice or use the chicken salsa verde in a simple salad, or you can even assemble it into a chicken taco wrap.


Protein servings are about 6oz of chicken per meal & we split the bag of broccoli/cauliflower rice (veggie), split an avocado each meal (healthy fat), & tortillas on the side (optional carb). If you follow Beachbody's portion control containers, this recipe is 1 red (chicken), 1 green (broccoli/cauliflower rice), and 1 blue (avocado).
